UCLA Health Senior Cook - Ronald Reagan Medical Center in Los Angeles, California

Under

general supervision of the Executive Chef and the Principal Cook. You will be

responsible for the conception & implementation of upscale, culturally

diverse menus & recipes for patient care, retail operations & catering

services. Duties include working with Cook staff, which includes food

preparation & training. Other responsibilities include cost control,

requisitioning & proper storage of food items, observance of all sanitation

& safety procedures & adherence to all policies outlined by JCAHO, the

University of California & the UCLA Medical Center.

Salary

Range: $21.69 - $28.07 Hourly

Bill 525 was signed into law by Governor

Newsom in October 2023. Starting June 1, 2024, SB525 sets a new $23 minimum

wage for nonexempt healthcare workers and raises the exempt employee salary

threshold to $1,380/week (equivalent to $5,980/month or $71,760/year).

  1. As

defined under SB525, healthcare workers are defined as employees who are

involved in the provision of 'health care services,' which means 'patient

care-related services including nursing; caregiving; services provided by

medical residents, interns, or fellows; technical and ancillary services;

janitorial work; housekeeping; grounds keeping; guard duties; business office

clerical work; food services; laundry; medical coding and billing; call center

and warehouse work; scheduling; and gift shop work; but only where such

services support patient care'.

Employees (career, contract, student, per diem) in the UCLA Health medical

facilities (e.g. Ronald Reagan Medical Center, Santa Monica UCLA Hospital,

Resnick Neuropsychiatric Hospital, etc.) meet these criteria.

Qualifications

  • Five years of experience in food preparation and maintenance of a large kitchen, including 1 year of supervisory experience, or equivalent combination of education and experience.

  • ServSafe or equivalent safe food handling certification.

  • Ability to read, write, and speak the English language in order to comprehend Departmental and University policies and procedures, write grammatically correct memos, reports, evaluations, and specifications for operations, and communicate clearly to staff.

  • Skill in speaking clearly and distinctly in English using appropriate vocabulary and grammar in order to obtain and convey information to individuals at different levels.

  • Skill in supervising culturally diverse food service personnel, including delegating of responsibility, disciplining, and evaluating performance.

  • Must be knowledgeable in preparation of upscale and ethnic cuisine.

  • Must have knowledge of all basic culinary techniques and procedures, such as cutting, presentation, mother sauces etc.

  • Ability to create, standardizes, and supervises preparation of diverse recipes as needed in a large institutional kitchen.

  • Must be knowledgeable of, and adhere to all policies as outlined by JCAHO, HACCP, University, and Hospital standards.

  • Must be able to assume all responsibilities as outlined by the Department, with attendant accountability.

  • Must be knowledgeable of, and adhere to all Departmental policies such as attendance, punctuality, dress code, as well as those personnel related policies as outlined by Human Resources.

  • Ability to form, leads, and develop an effective team that participates in on-going Performance Improvement programs with measurable results.

  • Must be able to function independently, solving problems in a timely and judicious manner.

  • Mathematical skills to determine costings, expenses, and standardization of recipes.

  • Computer to skills to operate food management systems in place, and to generate memos and reports.
