Waldorf Astoria Maldives Ithaafushi made a wow debut in 2019 and is already recognized as one of the finest resorts in the world. Sprawled across three islands, the resort is one of the most sizable in the Maldives. It boasts the country’s largest Spa, and extensive recreation facilities and it’s the Maldives resort with the most culinary choices (an impressive 11 specialty cuisine dining options). Besides its 118 luxurious villas, the resort is also home to an exclusive offering: a private island, the largest in the country which is to be rented out in its entirety.

What will I be doing?

Executive Pastry Chef for Waldorf Astoria Maldives is an integral part of the Culinary Team whose main objective is to ensure that our guests are provided with quality food. As one of the key integral part of the guest satisfaction of the Hotel, this department carries a special responsibility. Specifically, as Executive Pastry Chef for the Resort you will perform the following tasks to the highest standards:

  • Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen’s bake/pastry shop through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic planning for outlet operation.
  • Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
  • Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

  • Previous experience in multiple culinary/food & beverage department head positions specializing in pastry design and creation.
  • Pays attention to details and have strong customer service skills.
  • Mature, meticulous, resourceful, organized and able to work independently.
  • Have impeccable follow-through and “Can Do” attitude and mindset.
  • Pre-opening experience in a luxury resort/hotel is an advantage
  • Ability to thrive at work with essential components of service excellence such as team work, flexibility and responsibility
