Balcones Distilling is a grain-to-glass full production distillery in central Texas. Specializing in American Single Malt and single grain whiskies, we operate a 200 bbl brewhouse and fermentor batch size with 2 x 100 bbl wash distillations and 2 x 65 bbl spirit distillations.

Diageo is looking for a team-oriented, organized, and driven individual to join the Balcones Distillery Brewhouse team.

Scope of the role:

This position offers a unique opportunity to gain a diversified perspective on fermentation and beverage production as well as broadening one's skills to include distillery operations. While the focus of this position is within the Brewhouse, opportunities will be available to cross train on all facets of our spirits production.

Candidates MUST be serious about safety, cleanliness, quality, and attention to detail. A good candidate will also need to lift up to 60 pounds, be able to twist and turn, be able to reach over your shoulders, and work in a standing, walking, or crouching position at a steady pace. Candidates must be able to work independently and have a curiosity about on-the-fly problem-solving.

Key Accountabilities:

  • Master the use of both physical and digital systems to oversee mashing, fermentation, and transfer of wort and fermented wash.

  • Safely move pallets of grain, super sacks, etc. via forklift and pallet jack.

  • Handle grain from unloading, to storing, to milling - including lifting and dumping 55lb bags of grain and making adjustments to the mill to meet specifications.

  • Effectively transfer fermented wash to the stills for distillation - requires lifting and moving hoses and operating pumps.

Requirements:

  • Desire to learn more about and gain experience spirits production.

  • Ability to communicate effectively with coworkers and management.

  • A working knowledge and understanding of health and safety, TTB and environmental risk management principles.

  • Production experience in brewing, winemaking, or distilling preferred but not required.

  • College degree in chemistry, microbiology, or food science or applicable experience in a related field preferred.
